Ingredients

very ripe bananas
1
teaspoon
vanilla bean paste
2
cups
rolled oats
¼
cup
mixed
chopped dried fruit (I use dates, apricots, sultanas, cranberries and goji berries)

chopped nuts - I use a combination of everything I can find including linseed and chia seeds and chop them almost into a meal in the Thermomix

teaspoon
cinnamon powder
Instructions
Pre-heat the oven to 180C fan-forced and
grease and line
a 20cm (8”) square tin.
Mash the bananas until smooth then stir in the rest of the ingredients using a spatula.
Spread the mixture into the tin and press down on the top and smooth it out.
Bake for 30 minutes.
Leave in the tin for 5 minutes then take out of the tin and cut into bars and leave to cool.
Notes
These freeze well. I just throw them in a zip-lock bag and then let one defrost on the bench when needed.
